Chef Richard has more than 20 years of professional experience as an executive chef. He specializes in creative menu innovations for special occasions and events. He earned an AS degree in culinary arts training at Johnson & Wales University, Providence, RI.
Most recently, he served as executive chef at Big Fish Bistro, Princeton. He managed and developed a kitchen team comprised of more than 30 employees and two managers.
In his quest for discovering the freshest produce available, he established relationships with local farmers who supply just-picked fruits and vegetables. He also maintains a vendor list of local organic meat and produce suppliers.
Earlier in his career, he served as executive chef at Martell’s Sea Breeze Restaurant and Tiki Bar, Point Pleasant; Quarter Deck Inn, Long Beach Island; and the Enclave at Jumping Brook Country Club/Conference Center, Neptune.
Chef has appeared monthly on the “Mike and Les Show” in New York City. He personally developed recipes which have been featured in “Recipes from Long Beach Island, New Jersey”.
